PLEASE post your recipes.
I started a new recipe database on my site. My mother gave me a few boxes of index cards with family recipes and I decided to put them online for the family, and am slowly doing so. I thought I might as well open it up to anyone who has a good recipe (or wants a recipe) as well. There isn't much there now, but I am hoping you can help me build it. Go to http://www.jscholtes.com/recipes to add your recipe. I have a particular interest in vegan and vegetarian recipes. Thanks in advance.

I have had this one for a while, and it's pretty awesome!

got this recipe online, and added my own thoughts too:

Makes 4-6 servings

Ingredients:
2 cans vegetarian beans (my favorites are northern and kidney)
frozen corn or any kind of frozen veggies
1 onion
a bunch of shredded cheese - whatever kind you like
leftover mashed potatoes (you can cheat and make instant mashed potatoes... I won't tell anyone. =D)
Salt, pepper, and seasonings

Directions
-preheat oven to 350* F. Grate the cheese, and set aside a handful.
-Put the beans into the casserole dish in which you are going to bake the pie (that's right, no mixing bowls to clean!). Chop the onion and add it to the dish. Add frozen corn/other veggies as space allows and to your own preference.
-Add salt and pepper to taste, as well as other seasonings. I like a combination of red pepper and oregano. Give the whole mess a good mix.
-Sprinkle the cheese - except for the handful that you set aside - over the top of the mixture.
-Spread the mashed potatoes (this is easiest if they're a little warm) over the top. If you don't have enough to cover the whole thing, then put "dots" on the top. Sprinkle the remaing cheese on the potatoes.
-Throw it in the oven. Bake for about an hour and a half or until the top is brown and the filling in bubbling up through the crust.

Variations:
-This is an informal recipe. You could probably bake it for up to 2 hours, I'm just always really hungry after smelling it cook for an hour and a half.
-The filling is generally pretty liquid-y. If you'd prefer a more solid pie, then try rinsing & draining one of the cans of beans.
-You can also add 2 chopped tomatoes to this, but it gives the pie a bit of an acidic flavor.
-Finally, this can be made a day ahead of time, thrown in the refrigerator, and baked as needed. It also reheats well.
